Firas Khlaifat, the proud owner of Jordan Heritage Restaurant, is a man driven by his passion for heritage conservation. With a background as a consultant and project manager in a multinational corporation, Firas made a bold decision to follow his heart. He left the world of consultancy behind to pursue his lifelong passion for preserving cultural heritage. Fueling his dedication, Firas founded Jordan Heritage in 2014, a non-profit organization standing at the forefront of preserving and promoting Jordanian heritage. At Jordan Heritage, Firas and his team are dedicated to bridging the gap between heritage and tourism. By pioneering innovative approaches, they have successfully created commercial sustainability for heritage conservation.
The Jordan Heritage Kitchen invites diners on a culinary exploration of Jordan, featuring well-known dishes like Mansaf and Maqloobah alongside hidden menu gems such as Basbasoan from Al-Salt, Makmora from Irbid, and Kushna/Kushneh from Aqaba. Situated in a peaceful corner of Weibdeh, the restaurant offers outdoor seating in its spacious courtyard during the summer and indoor dining in a historic house, soon to provide accommodation.
Inside, visitors can discover handcrafted items and fashion reflecting Jordanian heritage. With an extensive menu developed over five years of research, operated by a non-profit organization, the restaurant proudly presents 45 different dishes along with seasonal specialties. Ingredients are sourced from six governorates, with local families contributing to food preparation, adding personal stories to each dish.
Notable offerings include Haliva from Amman, a cheese-filled Circassian-style pastry, and Fatet Kishek from the Northern Regions, served with a flavorful Freekeh Salad featuring Pomegranate Seed, Chickpeas, and Beetroot.
